In an attempt to copy the look of the sourdough subduction bread I learned the best time to add cinnamon powder and liquid flavor to not upset the yeast is just before putting the dough in the pan to bake. I also added food color, which if left streaky is rather beautiful and in the case of black can look like granite if you want to play a prank with "rock hard" bread.
I divided the dough, put it in the loaf pan in oblong shapes, it comes out with multi colored and if desired multi flavored slices.
